King, Spring, Blackmouth …. It’s what’s for dinner tonight. Yesterday went fishing with friend Jeff and guide, Mark Ervig. This time we fished in the Columbia River out of the Port of Kalama. Jeff got a nice 20# hen and I got skunked, again. That’s 5 trips in a row, maybe more, I lost track, but that’s fishing. Anyway, Jeff shared his fish with me. We cut it in half since we were going to steak it out and I got the tail section which we prefer.

What irritated me was I discovered the freezer door was cracked open due to a loaf of bread caught in the door. Luckily things were not thawed to much.

I’ll grill that big piece with the fins on next week. I left the fins on for all that nice salmon fat around them.

It came out fantastic - this was great tasting spring. I used alder and cherry for smoke. We saved the bit or tail meat and the medium sized piece for salmon Pattie’s tomorrow. She saved the little globs of fat at the very bottom of the tail for me.
