Chicken Pot Pie

(This is a work in progress)

2 cans of the pop open pizza crusts (like the biscuits that pop open)
2-3 cups diced cooked chicken (I used 3, but if you use 2 this might fit in a round 9 inch pie pan)
1/4 cup diced roasted red pepper
1/2 cup diced sauted onion
1 can cream of chicken soup
1 can cream of mushroom soup
1 bag frozen mixed vegtables (thawed) I used the one with corn peas carrots and breen beans
salt and pepper to taste
2 cloved of garlic minced
1/4 chicken stock
1 egg (egg wash)

roll out 1st pizza dough thinly and place in 9x13 pan (wont cover the sides, but this is a work in porgress)
mix remaining ingredients in bowl then pour over 1st pizza dough
roll out second dough and cover the ingredients just added
beat egg with a couple of drops of water and brush over 2nd dough

Bake 375 for 25 minutes or until golden brown.

It came out very well for a first try
 
Next time I will cut down on the chicken and see if it fits into a 9 inch round pie pan. It looks like it will be close. That should also allow me to get some of the dough on the sides instead of just on the top and bottom.

Could you explain the crust to me? Are they marked pizza crusts or are they biscuits that you can use for pizza crusts? I don't think I've ever seen pop open pizza crust that was labeled that way...
 
I found a pizza crust in a pop open carboard tube right next to the pop open biscuits at the supermarket. I found it at wally world. They are marked pizza dough. I like it a little more than the flakey pie crust since the pizza dough holds together a little better.
 
Thanks. I'll open my eyes wider next time. I always go right for the buttermilk grands and don't look through the different stuff. I'm going to make this recipe. I love pot pies and those ones you get from KFC are too damn pricey.
 
Thanks Lefty! I think I could do that!! I'd have to use fresh veggies though. I just don't like frozen ones.
