Queen of the Jungle
1 clove garlic, minced
1 teaspoon grated, fresh ginger
2 teaspoons olive oil
1 tablespoon low-sodium soy sauce
2 cups frozen mixed vegetables
3/4 cup cooked brown rice
1/4 chopped, chicken breast
1 tablespoon chopped peanuts
Saute garlic and ginger in oil. Add remaining ingredients, cook until heated.
