Chicken in Spicy Sauce over Rice
2 1/2 lbs. boneless chicken
3 tablespoons vegetable oil
l 1/2 tablespoons flour
1/2 cup canned tomatoes
1/3 cup chicken broth
1 tablespoon lemon juice
1/3 c. tablespoons chopped onion
3 tablespoons poultry seasoning
1/2 teaspoon paprika
1/8 teaspoon black pepper
1/8 teaspoon garlic pepper
Cooked Rice
Cut chicken into individual serving size. Heat oil in Dutch Oven. Roll chicken in flour and brown in oil over moderate
heat. Add tomatoes, onion and broth, and cook 30 to 40 minutes
or until tender. Add remaining ingredients 15 minutes
before chicken is ready to serve. Serve over rice.
