Ingredients​

  • 8 oz. cream cheese, softened
  • 1/2 cup finely chopped artichoke hearts
  • 1/2 cup finely chopped spinach
  • 1 cup shredded mozzarella, divided
  • 1/2 cup freshly grated Parmesan cheese
  • 1 garlic clove, minced
  • 1 tablespoon chopped parsley, plus more for garnish
  • 1/2 teaspoon crushed red pepper flakes, plus more for garnish
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 bagels, halved

Instructions​

Step 1: Prepare the Spinach-Artichoke Mixture​

  1. Combine Ingredients: In a large mixing bowl, combine the softened cream cheese, chopped artichoke hearts, chopped spinach, 1/2 cup of shredded mozzarella, freshly grated Parmesan cheese, minced garlic, chopped parsley, and crushed red pepper flakes.
  2. Season: Season the mixture with kosher salt and freshly ground black pepper to taste. Mix until well combined.

Step 2: Prepare the Bagels​

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Halve Bagels: Slice the bagels in half and place them on a baking sheet, cut side up.

Step 3: Top the Bagels​

  1. Spread Mixture: Evenly spread the spinach-artichoke mixture over the cut sides of the bagel halves.
  2. Add Cheese: Sprinkle the remaining 1/2 cup of shredded mozzarella cheese over the top of the spinach-artichoke mixture.

Step 4: Bake​

  1. Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the bagels are golden and the cheese is melted and bubbly.

Step 5: Serve​

  1. Garnish: Remove the bagels from the oven and garnish with additional chopped parsley and a sprinkle of crushed red pepper flakes if desired.
  2. Serve Hot: Serve the cheesy spinach-artichoke bagels hot. Enjoy as a snack, appetizer, or even a light meal.
