Cheesy Skillet Cornbread

The problem I have with some corn bread recipes is that it comes out too dry and crumbly.

Your cornbread looks just delicious, Ross!! A friend of ours who lives in the deep South, talked of covering cornbread batter in bacon fat, baking it and then slathering it in syrup. Sounds just ghastly! Do people actually eat that? Really? Unreal!! My arteries snap shut tight at the very idea of eating something like that.................

Ian, I put the bacon grease in the cast iron skillet, put in 400° oven until the grease smokes. Pour in the corn bread batter and bake till golden brown.
Take a big ol' slice and fill with butter, now you are ready for the cane syrup.

Ross, your cornbread looks excellent. What did you have to go with it? Course with the cheese and corn could be a stand alone meal. I also like a big cold glass of sweet milk with cornbread in it. CF
