Cheddar - Horseradish Soup

Ingredients:

2 carrots, diced
2 leeks, diced
3 T. butter
1 tsp. cayenne
salt, to taste
3 tablespoons flour
2 tablespoons dry mustard
1 bottle of beer
1/4 cup horseradish
3 cups water
dash of Worcestershire sauce
2 cups half-and-half
1 1/2 cups cheddar


Preparation:

Sweat carrots and leeks in butter. Add cayenne, salt, flour and dry mustard; cook a couple minutes. Add beer, horseradish, water and a dash of Worcestershire; simmer until thick. Whisk in half-and-half and the cheddar cheese.

What did you think of this soup, Barb?

I tried something similar, with cheese and beer, years ago. Had to toss it out!

With the added horseradish it was awesome! I did add some extra horseradish too. lol I added cauliflower to the leftovers and it was also very good...
You could probably add some smoked sausage to this.

:mrgreen: I know, I was just razzin' her a little.

I'm not real picky. I'll drink any kind of light beer, just can't do dark, but I guess my favorite would be the same as yours.:beer:

I have found that cheap beer works best.... coors, bud, mgd, even keystone! I've tried it with more specialty beers, and it tasted kinda weird.
I also use a processed cheese as well as regular cheddar. I think it helps with the texture, keeps it smooth. Cream cheese is also a nice sitr-in, for the same reason.
