Catfish With Bacon/Horseradish Sauce
2-3 catfish fillets (I've used flounder a time or two)
4 strips of bacon
1 – 8 ounce package of cream cheese, softened
1/4 cup of chopped onion
2 tablespoons of butter
1/4 cup of dry white wine
2 tablespoons of horseradish
1 tablespoon of Dijon mustard
1/2 teaspoon of salt
1/2 teaspoon of black pepper
2 tablespoons of minced parsley
Fry the bacon until crisp, drain and set aside. Place the fish fillets in a buttered baking dish.
Fry the onions in butter until soft. Then in a small bowl blend the cream cheese, white wine, horseradish, mustard, salt, and the black pepper with the onions. Pour the onion mixture over
the fish fillets and top with the crumbled bacon. Bake at 350 degrees for 30 minutes or until the
fish flakes easily with a fork. Garnish with the parsley.
