Carnival Funnel Cake

ok there is not category for these things.. all the kids under 12 love this... i use to cook these things everyday, as well as all foods related to the fair...:whistling:

they make this mix in bags now but they are still not as good as the originals...here they are:

1 cup water
3/4 stick butter (6 tablespoons)
1 tablespoon sugar
1/8 teaspoon salt
1 cup flour
1 cup eggs, about 4 large eggs and 2 whites
Vegetable oil, for frying
Powdered sugar, for topping
Fresh Fruit, for topping(optional)

Boil water, butter, sugar, and salt together in a saucepan.

Add flour and work it in until it is all incorporated and dough forms a ball.

Transfer mixture to the bowl of a standing mixer and let cool for 3 to 4 minutes.

With mixer lowest speed, add eggs, 1 at a time, making sure the first egg is completely incorporated before continuing.

Once all eggs have been added and mixture is smooth, put dough in a piping bag fitted with a number 12 tip.

Heat about 1 1/2 inches of oil in a heavy pan.

Pipe dough into oil, making a free-form lattice pattern; cook until browned, flipping once.

Remove cake from oil, drain on paper towels, and top with powdered sugar. Continue until all of the batter is used.

OMG, I love these things! It's getting close to Fiesta here in San Antonio (a week long, city wide party) and this is one of my favorite parts. You can't turn the corner downtown during Fiesta without seeing a funnel cake cart.

i know all about the fiesta and the livestock show..use to work at them both in another life

We have the same thing here. Right down the street is a huge parking lot and open space where they hold carnivals and fiestas. I think they do about 4 a year during the summer months, but three of them are Mexican so no funnel cakes but plenty of great Mexican food!! And last time they even had these great Cuban sandwiches! What a find!
The other one is an American festival and has the funnel cakes!

if you like fair food and want to see a great variety, you have to attend the one in Sandwich,IL about an hour from you. I use to work there as well. That one runs the second week of september every year.
