Carbon Steel pans?

has there been a discussion? I see the cast iron thread.

my carbon steel pan is a Mineral-B pan from DuBuyer. we had a shaky start. it was the most fickle pan. food stickage, bad seasoning.

but we have since come to an understanding. I use it daily to help me avoid non-stick pan as much as I can. it is fresh on my mind since I just stripped it clean to the core with vinegar. I am starting it over with respect to seasoning. I am not one of those microcoaters of oil to put the pan in a hot oven cycle after cycle. I did it once to prevent rust, and I am just using it to cook.

I don't remember a discussion of high carbon steel pans. I got a kick of your personification of your pan, HP! :giggle:
