Cabbage Salsa

This is a mainstay for family gatherings, pot lucks or Labor Day barbecues. I'm not sure if it should be called a salsa or slaw, but it's good piled on a corn chip, as a taco topping, or just eaten with a spoon.

Yep, I can see the "just eaten with a spoon" happening here. Looks beautiful too!

I've just printed it out to make this weekend, since I'm getting both smokers going to do the last big BBQ for the neighbors.

(I'll have to substitute some of my incredible parsley crop for cilantro, since I cannot eat the latter).

I made this as a slaw for a big neighborhood BBQ this weekend, vyapti.

I finely shredded a head of Chinese cabbage, used one huge jalapeno, one enormous heirloom tomato, the juice of one lemon, one lime, a bunch of parsley instead of cilantro, and about a cup and a half of mayo (I couldn't bear to have a slaw without mayo) with s & P.

Everyone LOVED it, including me!
