Brandied Raisin Applesauce Bread

1 cup raisins
Zest of 1 orange
1 tsp cinnamon
1/2 tsp cloves
2/3 cup brandy
Combine above in a pint mason jar and soak for 48 hours shaking on occasion

2 cups flour ( I used 1/2 whole wheat)
1/3 cup oat bran
2 Tbsp baking powder
1 tsp salt
Whisk dry ingredients in a mixing bowl.

1 cup apple sauce
1/4 cup packed dark brown sugar
2 eggs beaten
Raisin mixture
1/2 cup chopped walnuts

Pre-heat oven to 350. Fold wet ingredients into flour mixture. FLod into a loaf pand that has been sprayed with cooking spray and dusted with flour. Bake 50 minutes or until an inserted toothpick pulls out clean.

Oat bran = old people food additive. I get it from a local health food store. They have a very nice bulk department. I toss it in lots of stuff I bake, as well as meat loaf or burger patties. Think of it as brillo pads for the arteries LOL!
 
Hey, if I eat oat bran, does that mean I can eat more bacon and pork rinds???
