One of the best reasons to cook a ham is to grind up the leftovers with pickles and onions, and mix with mayo for the BEST sandwich filling!
My mother always added a couple of hard-boiled eggs to the mix (probably after Easter), and I do believe it makes a difference!
I never measure, since it depends on how much ham I have. I've guesstimated, below.
Ham Salad
In a food processor, pulse each item separately, till finely chopped:
1 lb. leftover ham
half a large onion
10 kosher dill gherkins (dried in a paper towel)
3 hard-boiled eggs
Mix together and add enough Hellman's mayo to bind. Add pepper to taste.
Try not to eat it all before you actually get it onto the bread!
