Bolillos

I recently discovered these delicious rolls in the bakery section of my local market. They are oval/football-shaped, about 6" long, similar to a French baguette, soft & chewy on the inside. They came in a bag of 12 rolls for about $3.99. I sliced them in half horizontally, buttered them up, & couldn't stop eating them.

Initially, I was going to use them to make sandwiches (roast beef, avocado etc.), until I poked around on the web & discovered these Mexican-style pizzas, called Molletes (made w/ chorizo, etc):

My husband loves these things! Uses them for everything. We have the whole grain variety here, too, which is his favorite. I'll show him these recipes - I know he'll love them.
 
We eat those all the time. All panaderias here have them fresh every morning. At a quarter a piece they're cheap.
