Blue Bacon Burger

Blue Bacon Burger

Serves 4
2 lbs Ground Beef (not too lean)
1/2 lb bacon, cut into thirds (Canadian Bacon slices are nice too)
Chili powder
4 Sandwich-Sized English Muffins
Lettuce
large Tomato; sliced
large sweet Onion; sliced and seperated into rings
Butter
Pickles (sweet or dill, optional)
Blue cheese crumbles

Fry bacon in a large skillet until crisp, remove and drain on paper towels.
Divide into 4 separate portions.
Add a dollop of butter to the bacon grease and add onion; cook on med. heat until onions are softened and beginning to caramalize. Drain and set aside.

Divide ground beef into 4 equal size patties and dust liberally with chili powder. Fry or grill until brown.
Lightly toast English Muffins and place one patty on each bun, cover with onions and blue cheese crumbles. Then add bacon, lettuce, tomato, and pickles.
I like to cover both sides of the bun with mayonnaise before adding the fixin's, but I'm a Mayo-on-my-burger freak. The choice is up to you.
 
Oh YUM!

My neighbor forms her burgers around a wad of bleu cheese in the middle. I think I'd rather have it on top, like yours, Lucky.

to form burgers the same way everytime, i use an old lid from a big jar of coffee creamer... it gives me perfect 1/4 burgers everytime
