Beware the Meat Myths

Let me start by saying I am a true carnivore, I love meat (veggies to)

I like searing because I think it improves the flavor.

Marinating adds flavor, brining I think is better for birds and some pork. I think brining adds more flavor than marinating.

I love pigs because they are made out of bacon. Pork needs to be done but not cremated. I agree, do not over cook.


Poultry from the super market. Most come packed in some kind of mystery solution. Its really hard to find just chicken. One market, our Mexican market still sells whole fresh chicken. (no solution added) I think with the solution added they are just upping the weight. What ever it is I'm gonna was it off and then dry the bird. Now its ready to cook.
