I had some leftover baked feta from another recipe, and saw this recipe in a supermarket flyer. Using store-bought cooked beets made this a quick and delicious side dish! I had the herbs, too.
I did heat it up in the microwave for a minute, because I wanted the feta to be a little gooey. The beets and feta in the original recipe were served chilled or at room temp.
Loved it! (I really wish I had Uncle Ralph's food photo skills!)

Beets and Feta
Cooked beets (I had 3 store-bought cooked beets, cut into bite-sized wedges)
Feta, crumbled
1 T. olive oil
1 T. balsamic vinegar
1 T. chopped mint
1 T. chopped parsley
Whisk the oil and vinegar together in a medium bowl. Add the beets, mint, parsley, salt and pepper and toss to coat. Top with feta and serve.
