Baked Oatmeal

2 cups old-fashioned oats
1/2 teaspoon almond flavoring
1/2 cup sliced almonds
1 large apple, unpeeled and grated
4 cups milk
1/4 cup brown sugar
1/2 cup dried cherries

Preheat oven to 400 degrees. Coat 3-quart dish or baking pan with
cooking spray. In mixing bowl, combine all ingredients. Transfer
to baking dish. Sprinkle top with additional almonds. Bake uncovered
for 45 minutes. Serve hot.

Variation: Omit all almond flavoring and cherries. Add 1 Tablespoon
cinnamon, 1/2 cup raisins, and 1/2 cup peanuts, chopped.

Serves: 6 to 8.

I made a recipe for Pumpkin Baked Oatmeal that I printed out and cannot, for the life of me, find it again online!

It's made with 3 cups of rolled oats, 1/2 cup pumpkin, 3 eggs, milk, a little maple syrup and the usual spices. It can be mixed up the night before, refrigerated and baked the next morning.

I've been eating it all week and enjoying it.

There are many similar recipes on the internet but if anyone REALLY wants me to type out the recipe I used, I will.

I used LuckyTrim's recipe above as a guide and made some changes. I liked this baked oatmeal better than the pumpkin one and it was easier. Didn't take a photo, since it looked a lot like the one I posted earlier.

I made this and held it overnight in the fridge. Popped it in the oven in the morning. I'm really enjoying it and all I have to do is plunk a section of the leftover in a bowl and nuke it for 1 1/2 minutes.

1 large apple, unpeeled and grated
4 cups milk
1/4 cup brown sugar
1/2 cup raisins

Preheat oven to 400 degrees. Coat 3-quart dish or baking pan with
cooking spray. In mixing bowl, combine all ingredients. Transfer
to baking dish. Sprinkle top with additional almonds. Bake uncovered
for 45 minutes. Serve hot.



Serves: 6 to 8.
