Baked Feta Cheese

this one is simple and easy to make.. make it as you are waiting for the other part of your meal to be cooked

1 Block Feta Cheese
6 Tomatoes
Extra Virgin Olive Oil
Jar of Jalapenos

Preheat oven to 375*F.

Slice 4 tomatoes and share between 2 ovenproof dishes (individual). sprinkle with a little salt.

Finely chop a few jalapenos and sprinkle over tomatoes in both dishes.

Cut the block of feta in half, and crumble each half into each bowl.

Slice the last two tomatoes and place over the feta cheese. Add a few more chillies if desired and sprinkle with oregano.

Pour olive oil over both dishes so ingredients are nicely covered.

Place in middle shelf of oven for about 20 minutes or until cheese is soft and crisping round the sides.

Serve with crusty bread or bruschettas

I made a recipe similar to this using a small wheel of panela cheese a few weeks ago. Served with tortilla chips. Yummy.

I saw a recipe for baking a block of feta with herbs and olives, and couldn't wait to try it.

Got an excellent block of cheese at Trader Joe's. Very easy recipe, served with crostini.

I LOVED it! So delicious and decadent - I ate a little of this instead of dinner.


P.S. Didn't have any sun-dried tomatoes

Baked Feta with Olives

For serving:

  • fresh chopped parsley
  • sliced French bread or crostini

Heat oven to 350 degrees.

Add feta to a small baking dish.

Add olives and sun-dried tomatoes to the baking dish around the feta.

In a small dish combine olive oil, sliced garlic, oregano, thyme, rosemary, and a couple pinches of salt and pepper.

Pour over the block of feta, olives, and sun-dried tomatoes.

Bake for 20 minutes. Broil for 1-2 minutes.
