Asian Style Pork Ribs (Outdoor DO)

For anyone reading that isn't familiar, in the title, DO stands for Dutch Oven. This is a special DO designed to be used outdoors with charcoal.

This is a great and easy recipe with a wonderful sauce. If you can’t find country style ribs, you can use western style which is a long rectangular cut, often with small bones in them, but primarily boneless.

Asian Style Pork Ribs

Ingredients:

1/4 cup Soy Sauce
1/3 cup Orange Marmalade
3 tbsp ketchup
2 garlic cloves, minced
3 – 4 lbs Country Style Pork Ribs (bone-in)

Coals: 22 = 8 on bottom, 14 on top
Dutch Oven: 10”

Preparation:

In a large bowl, combine the soy sauce, marmalade, ketchup, and garlic. Whisk until smooth and then pour half of the mixture into your Dutch Oven. Now, arrange the ribs in DO on top of sauce. Once they have all been placed, drizzle the remaining sauce over then to cover. When your coals are ready, place 8 under the DO and 14 on top. Allow this to cook undisturbed for 2 hours or until tender. You’ll need to add another batch of coals after about 1 hour to 1 hour and 15 minutes. At that time, you can also open the lid and check for tenderness.
