Araxi Corn Soup

Yesterday I made Araxi's Corn Soup with some very old spooner Farm's sweetcorn - the sweetcorn was old but very tasty. Making the corn cob broth was interesting and quite good.

I didn't get pictures cutting the corn and cobs - very messy. I will say mine taste better than what we had at Araxi but then there are sure to be differences in corn age and taste, and my volume was a lot more than what the recipe stated.

Would you do it again, John?

Yes, for a special occasion, and I know what to expect. When mashing the slurry through the sieve it's nice to have an assistant do that.
