Apple 'n Pig Pie

4 Apples
4 Tbl Sugar
1 Tsp Ground Cinnamon
12 Pieces of Fat Salt Pork, about the size of a Pea
Line a pie-plate with a rich* crust; pare, core and slice apples thin, to fill the plate; sprinkle over these the sugar, cinnamon and pork; cover with crust and bake in moderate oven. To be eaten warm.

*rich crust
Crust:
2 cups flour
1/2 teaspoon salt
3/4 cup 2 tablespoon butter, chilled and sliced
2 teaspoons sugar
1/4 cup ice cold water
In a large bowl, combine flour, salt, and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Separate into 2 balls. Wrap in plastic and refrigerate for 4 hours, overnight, or in the freezer for 30 min.

Roll one dough ball out to fit a 9 inch pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate. Roll out the other dough ball for the top crust layer.
