Anyone use Curry?

Just wondering. Ive been using the yellowish powdered curry more and more in sauces and rubs. (no not back rubs :twak:)
 
I like to use it for more of some of the Japanese style Currys. . . like one would get at CoCo Curry house Ichiban on O'ahu, or in Japan.


When it comes to Indian style Curry, I grind my own. The fresher, the better, no doubt. I LOVE the more north Eastern Style Indian Curries, anything between Goa and Mumbai.

for just the yellow, ubiquitous "Curry powder", I too agree with Tuna salad. I like it when doing Chicken Salad, but instead of mayo, use plain yogurt with a little bit of mayo, and incorporate red grapes, and chopped cilantro, and a little mint.

A Quick and simple stir-fry, for a low cal, friendly wrap: Hot hot pan, sesame oil, ginger, garlic , some shrimp, sprinkle with the Curry powder, add a dollop of plain yogurt, kill the heat, add a squeeze of lime, and put on a bed of finely shredded cabbage, jalapenos(no seeds), julienne of carrots, cucumber and roll up in a tortilla of your choice. No guilt, great tasting wrap.

A great take on fried chicken: marinate 8 cut chicken in ever so lightly sweetened iced tea, salt, pepper, ginger, garlic, red chili flake, curry powder, and a splash of vinegar. . . to easy cooking for the final result, poach chicken in a similar spice mix, until chicken is JUST to 150 degrees, remove, DRAIN/DRY and chill.

next up, dredge in a mix of rice flour, cornstarch, curry powder, sald, and some potato starch if you can get it. Dredge the chicken in this dry mix, and let it rest for 15min. If you like really crispy, repeat the process. . ..dredge the bird, rest, and then deep fry at 340 for about 12-15min.

Serve with some mango salsa, or on a bed of mango Puree, and it is the best take on mango Curry fried Chicken one can hope for. Steamed basmati rice, and some Cauliflower, and I am in heaven.
 
When I go to my brother's farm I use a curry, but mainly to curry favor and get invited to dinner. I've never seen him or his wife use it when cooking?!?! Their Indian neighbor uses curry all the time...I can smell it.
