Just curious. I was thinking about picking up some catfish or snapper and didnt want to use oil or bake. Do you folks find steaming to be a good choice on fish?
I've never tried steaming but it should work. Another way to cook is en papillote (in paper). You wrap the fish in parchment paper with some vegetables & liquid (usually wine) then bake in the oven (the fish steams in the packet).

I would go the en papillote route. Plain steamed fish, even if it's seasoned, is kind of bland. Doing it in paper, with wine and lemons, gives it some extra flavor and a "sauce" of sorts.
Well then in the over it goes. Ill use aluminum foil because I just dont know where to pick up parchment paper. You think the foil route is just as good?
