Pastitsio:
1 Tbsp olive oil
1 1/2 lbs ziti
3/4 c grated kefalotyri or parmesan cheese
2 - 2 1/2 c fresh tomato sauce
1 Tbsp orange zest
1tsp oregano
2 c of Besamel (white) sauce
2 eggs slightly beaten
Preheat oven to 350. Coat a 9x13 baking dish with oil. Boil ziti to package directions and drain. Add half of cooked ziti to pan, spinkle with cheese then layer tomato sauce. Sprinkle zest and oregano over the sauce. Distribute remaining ziti over the top.
In a mixing bowl, combine besemal and eggs, whisking until smooth. Spread over the top layer of ziti and top with remaining cheese. Bake until golden, approx 50-55 minutes.
