Andy Goodwin's Bourbon Balls
My dear friend, Andy (may he rest in peace) at one time in his life was a caterer and for several years I helped him make tins of these candies to give to his wife's clients for the holidays.
Yield: About 1 pound
Ingredients:
6 T cocoa
3 cups powdered sugar
3/4 cup bourbon whiskey
6 T light corn syrup
7 1/2 cups crushed vanilla wafers
3 cups broken pecans--we used pecan or walnut meal
extra 1 1/2 cups powdered sugar for dredging
Directions:
Sift together cocoa and 3 cups powdered sugar. Combine and stir in the whiskey and corn syrup. Add and mix thoroughly 7 1/2 cups crushed vanilla wafers and 3 cups broken pecans or pecan meal. Roll mixture in small balls. Dredge in 1 1/2 cups powdered sugar. Place in little candy cups. Put into decorative holiday tins and give to all your friends.
Can substitute rum for rum balls. Watch out though--these pack a whallop!
