I'm making this for dessert tonight. The Amish may live a simple life, but they do know how to pig out! This quick and easy pudding cake has the texture of a brownie but also forms its own chocolate sauce as it bakes. Serve warm with vanilla ice cream!
Amish Chocolate Fudge Pudding Cake
1 cup sifted all-purpose flour
2 tablespoons cocoa powder
2 teaspoons baking powder
1 teaspoon salt
⅔ cup white sugar
½ cup milk
2 tablespoons butter, melted
1 teaspoon vanilla extract
½ cup chopped pecans
1 cup brown sugar, packed
¼ cup cocoa powder
1½ cups boiling water

- Heat the oven to 350 degrees and grease a 1-quart baking dish.
- Sift together in a large bowl the flour, 2 tablespoons cocoa, baking powder, salt, and white sugar.
- Add to the flour mixture the milk, melted butter, and vanilla; mix until just smooth; stir in pecans; do not over mix.
- Pour batter into prepared baking dish.
- Combine brown sugar and ¼ cup cocoa in a medium bowl and mix well; sprinkle this mixture over the top of the batter.
- Gently pour boiling water over the batter; do NOT stir.
- Bake for 40 minutes, or until top of cake appears firm.
- Remove from oven and cool on rack for 10 minutes.
- Cut in squares and serve warm, pudding side up, topped with vanilla ice cream if desired.
