7-bone chuck ideas, please?

7-bone chucks are on a great sale this week, and rather than make the usual pot roast with root veggies, I thought I'd see if any of you have a recipe I may like to try :chef:

(note: please, nothing that uses a can of creamed/condensed soup!)
 
you can make a goulash out of it or.....

1 (4-5 lbs.) 7-bone roast
1/2 C water
1 C red wine
1 envelope Lipton Onion Soup Mix
1 onion, chopped
Carrot slices
Potato cubes
Garlic, minced (1-2 cloves or to taste)

Place onion, carrot slices and potato cubes in bottom of crock pot. Place roast on top and season with salt and pepper. Add water and wine, sprinkle with soup.
Cover and cook on low for 8-10 hours.

or

brown the meat, sauté tomato past with mirepoix, deglaze with wine and add some chicken stock and braise.

Liquid should come up to a little less than ½ up the side of the meat.

Simmer on the stove or in the oven till done.
 
I sure appreciate your ideas, Jeff - sorry, I forgot to also add that there can't be any "mix", red wine or onions (unless they're the green ones), thanks to the food intolerance fairy

However the second sounds interesting - I've never made beef with chicken broth - is it just for a lighter flavor?
 
i use chicken stock because that is usually what i have on hand... once the beef cooks, it will dominate the chicken stock flavor anyways

subtitutions for you then

celery,spring onions(green),carrots

1/4 cup or more red wine, substitute the following:
equal measure of red grape juice, cranberry juice,
apple cider, chicken broth, clam juice, flavored
vinegar, or nonalcoholic wine. If you use nonalcoholic
wine, add a tablespoon of vinegar to cut the sweetness


Grape juice; vegetable stock; cranberry juice; tomato juice; or concord grape jelly.

I do use non-alcoholic red at times, but never thought of changing it out for cranberry - that would be quite a zingy change :smile:
 
Toast (or fire-roast) some jalapenos, and char an onion that's been cut in half. Place those, the beef, and some beef stock in the crockpot for 8 hours or so, on low, until fork tender. Use for taco meat, quesadillas, enchiladas, etc.

Gumbo? I've got a recipe for "seven-steak" gumbo; it's one of Prudhomme's.

Do you have a smoker? I've always wondered what smoked beef chuck would taste like.
 
once I got to the store, I didn't see any that I particularly liked :sad: bummer, eh?
But the good part is that I did get loads of other meats.

thanks... thats last years model and we are trying to improve on it (now that i can actually use photoshop.lol)

i had a sign maker/t-shirt maker/auto graphics maker do it for me last year... he made me some shirts in exchange for some old body jewelry i had laying around(from another business i had..lol)

i am hoping by late spring,early summer i will have those for sale as well as some other things relating to my bbq name and catering company...

hot sauce
t-shirts/stickers etc
gourmet spice grinders

i use to sell body jewelry,teddy bears and different things to concessionaires in the outdoor amusement industry(county fairs,state fairs etc etc)
