I don't know about that recipe, but the 40 clove chicken recipe we have used tastes fantastic. I buy the jug of peeled whole garlic cloves in the produce section after peeling the 40 cloves the first time. :)

You know, Shermie, duck leg/thighs would be something to try.
I DO have duck legs in the freezer. And that was my thought when I bought them. I'm planning to use canola oil to cook them in. with herbs & garlic cloves. They have to be marinated in the fridge overnight. I've seen a very young & thinner Emeril Lagasse do it. Here he is. :whistling:
