I don't know about that recipe, but the 40 clove chicken recipe we have used tastes fantastic. I buy the jug of peeled whole garlic cloves in the produce section after peeling the 40 cloves the first time.

I asked my wife why she didn’t buy pre peeled garlic! She dint think about it ….

We really liked it and will get more at the commissary.
This is the product she got. The sauce from the garlic
chicken was a nice compliment to the grain.

You know, Shermie, duck leg/thighs would be something to try.

I DO have duck legs in the freezer. And that was my thought when I bought them. I'm planning to use canola oil to cook them in. with herbs & garlic cloves. They have to be marinated in the fridge overnight. I've seen a very young & thinner Emeril Lagasse do it. Here he is.
