I know mine will involve a standing rib roast and a side of oyster dressing.
Reverse sear!This baby is aging in the fridge until Monday. I cut off the bones, seasoned everything with salt and pepper, tied the bones back onto the roast.
Still haven't decided if I'm going to reverse sear or go with my TNT Joy of Cooking (high temp to lower temp).

I understand. Feeling a bit that way myself. The public is sucking all my Christmas joy outJeffrey has covid, so he won't be going to see Kasey this weekend. Ty and the family are heading out tomorrow morning for their shared rental in the Carolinas.
We're all going to be doing something in the new year.. it's always something.
I was depressed earlier today, but I've been instructed to buck up Mother!

So, our plan just changed. I asked Judy if she wanted to do anything for Xmas, and she said she didn't want anything in particular, except pie, Any flavor - just pie - I haven't made one in a long time, and she doesn't like store-bought pie, just homemade (yeah, she likes my pie crust and is SPOILED). Well, if I have to make pie, I guess I have to make dinner.
So we looked in the freezer and found a LOT of seafood; shrimp, mahi, more shrimp, grouper cheeks, still more shrimp, lobster tails, stone crab claws, (yes, more shrimp), red snapper..... you get the picture. Meat was lamb shanks, duck legs, foie gras, duck Breast (we had that for Thanksgiving), S/B chicken breast....you get the idea. Nothing that screams "Christmas". We decided on lobster tails, then changed our minds and I went to the grocery and bought a chicken.
Christmas dinner now looks like roast chicken, rutabaga with gravy, a salad, and PIE!. That's more than enough food for the 2 of us.
Well, I roasted some pumpkin to make a pumpkin cheesecake with pecan praline sauce topping to take to a holiday party recently, and I have some leftover pumpkin puree. So I am using it up. One of her favorites is pumpkin chiffon pie - so that will be it.Okay, so what kind of pie???
