2021 Spring Holiday (Passover or Easter) Menus/Plans

Whether you observe Passover or Easter what will you be eating?

It will be just my immediate family, and we will be eating at home.

These are my tentative plans. I've revised my menus 3X already, so things may change.

Good Friday Dinner

Shrimp Cocktail
Caesar Salad
Clams Casino
Garlic Bread
Spanakopita

Easter Sunday

Breakfast:

Dyed eggs
Mom's Italian Easter Meat Pie

Lunch/Appetizers:

Stuffed artichokes
Stuffed Mushrooms

Dinner:

Turkey
Stuffing
Gravy
Mashed Potatoes
Baked Mashed Sweet potato (Praline Topping)
Asparagus
String bean salad

Dessert:

Cheesecake
Sweet Pie

Easter Sunday we are having ham balls, cheese potatoes, and corn pudding. I want to make Ambrosia, as well, but she may have other ideas.

My wife’s family tradition is to make creamed eggs on toast for Easter Sunday breakfast.

I have been dry aging a 8# rib roast since February 17. I hope to get 7 steaks, but it shrank a bunch. I will probably sous vide or smoke.

Mark, how do you dry age in a vacuum pack? You just leave it in the fridge?

A couple of years ago I aged a prime rib on the garage floor for almost three weeks. The garage is always ice cold, though. I did the one from Christmas on the floor and it was a bit gamy by the time I cooked it but a vinegar bath tamed
it down.

We bought a boneless leg of lamb but now we are having ham balls so the lamb will go into the freezer. Then there is the Turkey we bought in November... it’s getting out of hand.

Welcome :)

When it’s aging it forms a pellicle skin. Like a protective protein layer. Just trim that off and grind it up for burgers. This is my first time trying this method.
