    I need some help?

This is only my 3rd year of gardening and I've got a lot to learn. The last two years I had some "pretty" tomatoes but this year almost everyone has these cracks in them. I planted the tomatoes about 5 -6 weeks late and wonder if that has anything to do with them, or could it be the...

    Roasted Peppers

I tried roasting peppers last night for the first time. I was grilling chicken the other side of the grill so while waiting for the chicken I thru some Chile peppers on the other side. I hope I did this right. I turned them so the skin would blacken on all sides. I didn't remove the seeds...

    A big bag of peppers

A friend from Nebraska brought me some peppers over the weekend and I think I've got the different types right. Correct me if I'm wrong. There's Hungarian, Habaneros, Anaheim, and Green Chile. Will share a few with next door neighbors, use some, dehydrate a few, and try to roast and freeze...

    Ay the wife's request

We've been busy the last few days with canning and dehydrating. On Sunday we canned 16 qts. of dill pickle spears and 7 pints of cucumber relish. I boil the jars and do the boiling water bath on the deck. It's fast and keeps the heat out of the kitchen. And much of the mess. On Monday I...

    Here come the tomatoes!

HERE COME THE TOMATOES! I got a 5-6 week late start on my tomato plants this year, but there starting to turn now. I'll be overwhelmed in a few days. That's a good thing! Tomatoes dehydrate and rehydrate extremely well with good taste, so I built 3 more drying trays just for them, and I can...

    What I picked today

I knew that I had one good sized cantaloupe hiding in the leaves of my best plant, but what a surprise when I found a second one the same size from the same plant. The two larger ones both measure 23" in dia. I'm sure not a record, but made me smile. This is the first year I've grown more than...

    More squash to dry

Now that I've got the hang of dehydrating, it's time to get serious about preserving some things. I realized that the trays could be stacked on top of each other to save space and keep them on the bottom two shelves closer to the higher heat. So I built some more. I also realized the...

1st attempt at a homebuilt dehydrater

My Makeshift Dehydrater This started out as just 4 stainless shelves that I had. I made the uprights from some 3/4" alum tubing with 1/4" bolts thru the leg, spaced to hold the shelves at an even distance from each other. I had 4 casters all the same size and they fit up inside the alum tubing...

    Learning how to Dehydrate

Here are a few more pictures of potatoes and yellow squash I'm getting ready to dehydrate. I've found out that (I'm new at this) by blanching the potatoes before dehydrating, they don't loose their color after drying. I started out just dehydrating the squash without blanching, but now I do...

    Froze some corn

Picked about 80 ears of sweet corn yesterday. Blanched it outside on the deck. Took 3 batches to do all of it. Saved back about 18 ears for eating on the cob. Love butter running down my face as I pig out. Cut what I was going to freeze. Ended up with 12 quarts to the freezer.
