By the way, any tips for those of us who might be new to the crawfish boil scene?
Also you can drink some beer when you eating spicy crawfish, they are the best match !Hi Edward,
Here are the steps to make spicy crawfish:
- Rinse the crawfish thoroughly, remove the heads and clean out the intestinal tract.
- Prepare dry red chilies, Sichuan peppercorns, bay leaves, star anise, cinnamon sticks, and other spices, as well as ingredients like scallions, ginger, and garlic.
- Heat oil in a wok, stir-fry the spices and ingredients until fragrant.
- Add doubanjiang (spicy bean paste) and stir-fry until the oil turns red; add more for extra spiciness if desired.
- Add the crawfish, stir-fry over high heat.
- Pour in beer and a suitable amount of water, then begin seasoning with sugar, soy sauce, cooking wine, and oyster sauce.
- Bring to a boil over high heat, cover and simmer for twenty minutes. Uncover and cook for an additional ten minutes on high heat to reduce the sauce.
- Finally, transfer to a serving dish and enjoy your delicious spicy crawfish.
