Tonight's entree was an assembly of storebought ingedients: breaded/fried eggplant slices layered with delicious basil pesto and ricotta, topped with a little sauce then slices of mozzarella. Wonderful and no effort!

Made this tonight with my leftover pork tenderloin and tossed some leftover vegs in there as well as the rest of the stuff.
I have enough for lunches all week!
Below, unadorned and then topped with queso fresca and cilantro.

I picked up some pre-made eggplant involtini (rollatini) at an upscale farm stand. It's spectacular and I loved it, but VERY rich with cheeses. Could only eat half of the portion I plated, after eating my salad. Lots of leftovers. :heart:

Grilled pork tenderloins, grilled squashes and grilled packets of carrots/onions/butter.
My taste buds must be off, since I seasoned the pork and squash fairly heavily but ended up bland.
