Also, how much cabbage, v8, and water are you adding? I use much of what you do but offset the V8 by adding broth instead of plain water.

Are you putting aa lid on it? Some soups and broths can sour if they are completely lidded. If you are, set the lid ajar so it is vented.

I was told that it could not sour without a dairy product in it, but it sure does.
