Tomato Cracker Salad

I can remember when I was very young , my Grams doing this with the tomatoes they grew in the garden.
It was a nice light meal or snack on hot summer nights.
That or tomato mayo sandwiches 😊

Paula Deen has one, too, online and in Lady and Sons Cookbook. I made it once and we loved it! She put an egg in it (natch) and green onions - delicious!

• 1 sleeve saltine crackers
• 1 large finely chopped tomato
• 3 finely chopped green onions
• 1 1/2 cup mayonnaise
• 1 finely chopped hard boiled egg

Years ago I could get Branola bread. Haven’t seen it in years. Well not the version I remember. Anyway I loved toasting it and adding mayo. Then making tomato and lettuce sandwiches.
