Kale Popcorn

½ pound kale (or one bunch)

Cooking spray

¼ cup nutritional yeast (has a savory, almost Parmesan-like flavor)

Bag of plain salted popcorn


Preheat oven to 350. Tear stemmed kale leaves into pieces.

Coat 2 rimmed baking sheets with cooking spray. Arrange kale in single layer. Lightly coat kale with cooking spray and massage gently into kale. Bake 10-15 minutes until crispy, rotating trays halfway through cooking. Season with salt and cool (these kale chips are delicious just like this!).

In a food processor, pulse kale until finely ground. Pulse in ¼ cup nutritional yeast to combine.

To a large brown paper bag, add 8 cups plain salted popcorn and lightly coat with cooking spray. Sprinkle popcorn with kale mixture and shake vigorously.
