BBQ Baked Beans - Bam Style

2 lbs dry Great Northern Beans (any white bean will do)
1 large red onion, chopped roughly
5 cloves garlic, minced
1 1/3 cup ketchup
2 TBLS prepared mustard
1/3 cup apple cider vinegar
2/3 cup molasses
1 cup brown sugar
1-2 lbs smoked/bbq'd rib tips/trimmings
4-5-6-7-8 pieces of bacon, chopped
S & P to taste

soak your beans in cool unsalted water the night before you want to use them.

the next morning...

add all your sauce mixture including garlic and onions to a large crockpot. add your beans and stir well. to the top add the smoked meat. add enough water to cover the beans.(you may have to add more as it cooks.)

cook on high for the first 3 hours, add bacon, then cook on low for an additional 5-6 hours or until done.

you know that feeling when you make a dish and you just know it doesnt get any better? well this is the one and i finally wrote exact measurements..lol

i have made lots of beans and this one is by far the best i have ever made.

so do i pass the Boston standards?...lol

i dont add chili powder ever(that makes it chili then..lol)
once and awhile i add a little cayenne but usually only to my own bowl.

pass? fail? ...lol

i actually like it both ways... grew up eating it with beans because we didnt know any different/better..... in my many years of travelling in USA, i made a stop in Houston,TX and discovered.... chile no beans, Q'd brisket, pulled pork sandwiches(i was at the houston chili cookoff/livestock show)..the rest is history..lol

they key ingredient is the Q'd rib tips and trimmings... i rubbed and Q'd them on mothers day for these beans.

i cant remember who told me about the AC vinegar but it works....lol

Thanks for sharing Bam. Question, how are they cold the next day?

i will tell you tomorrow...if they last that long around here..lol

but in my experience, my homemade beans as with most things i cook are better the next day...flavor come together better IMHO
 
Damn, looking good! So white beans are the bean of choice for backed beans? I've always used canned, but you are inspiring me!! :thumb:

most commercial bean makers use navy beans but any white bean will do for this recipe... its just the way i learned how to make them, i guess you could use any bean according to your taste...

it is way cheap to make and tastes so good... especially when you use your own smoked or Q'd meat in it
