Default Non-Traditional Egg Rolls

I have been thinking of using egg rolls for non-tradional uses. I have filled them with;
ham and cheese
Apple pie filling
Chili and cheese (messy to roll up) I put the chili in the freezer for a while to make it easier to work with.
pastrami & provolone

I even saw a Guy F. recipe for using pulled pork.

Do you guys have any other ideas for egg roll filling in the non-tradional sence? This could be a fun list.

Spinach, feta and pine nuts
Sticky rice, salami chunks, fontina chunks

They all sound fantastic, Lefty!

cream cheese... deep fried cheesecake
cherry pie filling/any pie filling & cream cheese
peaches & cream cheese
strawberries & cream cheese
bacon & cream cheese

i am on a cream cheese fixation today..lol

i have done with all sorts of fillings and then deep fry.
