Amish Chocolate Fudge Pudding Cake - TNT

I'm making this for dessert tonight. The Amish may live a simple life, but they do know how to pig out! :pig: This quick and easy pudding cake has the texture of a brownie but also forms its own chocolate sauce as it bakes. Serve warm with vanilla ice cream!

Amish Chocolate Fudge Pudding Cake

1 cup sifted all-purpose flour
2 tablespoons cocoa powder
2 teaspoons baking powder
1 teaspoon salt
⅔ cup white sugar

½ cup milk
2 tablespoons butter, melted
1 teaspoon vanilla extract
½ cup chopped pecans

1 cup brown sugar, packed
¼ cup cocoa powder

1½ cups boiling water


  1. Heat the oven to 350 degrees and grease a 1-quart baking dish.
  2. Sift together in a large bowl the flour, 2 tablespoons cocoa, baking powder, salt, and white sugar.
  3. Add to the flour mixture the milk, melted butter, and vanilla; mix until just smooth; stir in pecans; do not over mix.
  4. Pour batter into prepared baking dish.
  5. Combine brown sugar and ¼ cup cocoa in a medium bowl and mix well; sprinkle this mixture over the top of the batter.
  6. Gently pour boiling water over the batter; do NOT stir.
  7. Bake for 40 minutes, or until top of cake appears firm.
  8. Remove from oven and cool on rack for 10 minutes.
  9. Cut in squares and serve warm, pudding side up, topped with vanilla ice cream if desired.
Note: If made in advance, pudding can be reheated in microwave or covered with foil and reheated in a low oven.
