6 slices bacon, cooked, crumbled (reserve drippings)
2 large onions, chopped
1 (4 oz) can sliced mushrooms (optional)
1 (20 oz) can yellow hominy, drained
1 tsp Worcestershire sauce (optional)
1 (10 oz) can Rotel tomatoes
1 tsp salt
1/4 tsp pepper
1 c shredded cheddar cheese
Saute onion and pepper in bacon drippings. Stir in all ingredients except cheese.
In casserole dish, layer hominy mixture and cheese, ending with cheese.
Bake at 350F for 20 minutes.
