I thought I would start a new thread for the current week.
Tonight we had Macaroni Pizza Casserole, a recipe my dad made years ago. Always a favorite.

Nothing to write about as far as eating and cooking.
Last 6 days have been messed up. Tina's Uncle took a fall, and is in the hospital.
Tina had been driving 3 hours down and 3 hours back every day.
He's in the hospital down there, and doing great.
Poor guy (90 y o ) was the "I've Fallen and I can't get up person!"
He was on the floor for 4 hours; until he finally opened his cell phone in his pajama pocket, and called.......

So, with all that.... It has been sandwiches and whatever can be scrounged up and cooked really quick.

Today, DIL made some manicotti, and brought them over for me and Mom!

I also had a nice Bologna Sandwich on Italian Bread. Had it with hot mustard and then dipped it in some of those Taco Bell Packets of Hot Sauce... We have them all over the fridge (a pet peeve of mine ), and so I gave up fighting over the situation.

Yesterday,,,, we celebrated Son Jimmy's 45th Birthday, and Mothers Day at the same time.
We went to this place called California Pizza Kitchen. 36 Mile drive East, and IMO I didn't jump for joy with the taste of the pizza. Hey! The son likes it...so who am I to say?" ............ 8 people 228.00 ***FOR 8-- 12 inch PIZZA'S?"........

I'm with Jimmy Jr. I love California Pizza Kitchen. First time I ever had it was in Las Vegas, love that place too...cha ching :brows:.

I made an Italian pot roast last night. I also made up a big roll of polenta with sun dried tomatoes and parmesan and put it in the freezer. Now all I have to do is slice off a little when I want polenta rounds. I've never tried the freezer method, so hopefully it won't crumble apart when I cut it.
 
I make today "Jansson´s Temptation" - anchovy fillets, potato slices and chopped onions with cream cooked in the oven.

I'm about to make another bowl of potato salad tomorrow! it was so good when I did it yesterday at a friend's house!! :eating2:
 
I had a taco salad last night with the traditional toppings. I'll probably have another one tonight with some different toppings.
 
(Sunday) I wanted comfort food on Mother's day so I made meatloaf, steamed baby spinach, mashed and gravy with a side of baby greens salad (with sliced mushrooms, black olives and sliced vine tomato).

Monday - homemade pizza
Tuesday - tacos
Wednesday - western omelet
Thursday - Planned for tonight - linguine with steamed cauliflower on the side
 
Lunch today was Roy Rogers Roast Beef sandwich...
Tina was in South Jersey Tuesday, and on the way home, she stopped at the freehold service stop, and picked up a few. The lady was so nice. Sge put the beef slices on the roll, and put the auju dripping sauce in a separate container; that way the buns / sandwiches, were not sopping wet. They were a little damp from the steam, but OMG...they were so good.

For Supper tonight, Tina made stuffed peppers. They were good, but I like the meat filling more firm. I'm not complaining; just stating my preferences.
Now I am having one of those drumstick frozen ice cream cones. Goood!:mrgreen:
 
bartender gave me 2 guacamoles & chips to critique. i swear, i thought there was a festival, (that is why she made quac.) except i have yet to hear noise via an event. damn. now i hafta read my local bulletins.
 
Made some thin sliced chicken fried steak today.
That was it....and we just ate them like finger food.
They were finger lickin good!
 
I actually remembered to take a picture of some food...

It was so cold and windy last night I decided to use the stove on the boat, which I have never used since we have owned it.
I made chicken and mushroom enchiladas and for desert, strawberry cream cheese popovers. Turned out surprisingly good. I'll post the recipes in their respective forums.
