s Grilled Pineapple Glazed Chicken Breasts s
Yields: 4 Servings
Ingredients
4 Boneless skinless chicken breasts
2 tablespoons Soy sauce
2 tablespoons Brown sugar
1/2 teaspoon Ginger
1 can (20 oz) Pineapple slices drained, reserve juice
1 can (6 oz) Pineapple juice
Salt & pepper to taste
Instructions
Mix together soy sauce, brown sugar, ginger, and pineapple juice.
Pound chicken breasts ¼" thick.
Place chicken and marinade into a Zip-Loc bag or shallow bowl and marinate about 45 minutes.
Grill chicken breasts about 8-10 minutes, brushing with marinade, and turning once.
Brush pineapple slices with marinade, grill, and serve as garnish. Rob Howery
