Oatmeal Peanut Butter Cookies

I found a recipe for Oatmeal Peanut Butter Cookies on allrecipes.com and made them this afternoon (with a few minor modifications, of course). Simple, quick, and delicious! Printable copy attached.

Oatmeal Peanut Butter Cookies

½ cup shortening (Crisco)
½ cup unsalted butter, softened
1 cup packed brown sugar
¾ cup white sugar
1 cup crunchy peanut butter
2 eggs
1½ cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup rolled oats

1. Preheat oven to 350 degrees.

2. Line two baking sheets with parchment.

3. In a large bowl, cream together shortening, butter, brown sugar, white sugar, and peanut butter until smooth.

4. Add the eggs one at a time and beat until well blended.

5. Combine the flour, baking soda, and salt; mix into the creamed mixture until well blended.

6. Add the oats and mix until just combined.

7. Drop dough by teaspoonfuls onto prepared cookie sheets; make 12 cookies per sheet.

8. Bake for about 12 minutes in the preheated oven, or until just light brown. Don't over-bake. Repeat with remaining dough.

Cool and store in an airtight container.

Makes 4 dozen cookies.

Oh my gosh, how beautiful, Doug! So much prettier than just plain oatmeal cookies, and so perfectly baked!

Where's my milk?!

I'm sure creamy PB will be fine -- original recipe did not specify creamy or crunchy, but I like nuts in my cookies. Probably good with chocolate chips, too, or maybe coconut, or maybe all of the above. :pig:
 
Here's a similar one with CC's and nuts-

WHOLE-GRAIN PEANUT BUTTER CHOCOLATE CHIP COOKIES

1 Cup whole-wheat flour
1 ¼ cups quick-cook oats
1 tsp baking soda
½ tsp salt
½ cup creamy peanut butter
½ cup canola oil
3/8 cup granulated sugar
3/8 cup brown sugar packed
1 tsp vanilla
2 large eggs
2/3 cup semi-sweet chocolate chips
1 cup chopped nuts

1) Preheat oven to 350. Combine flour, oats, baking soda, and salt in a small bowl. Beat oil, peanut butter, sugars, and vanilla in a large bowl until creamy.
2) Add eggs one at a time, beating well after adding each. Gradually beat in flour mixture. Stir in chocolate chips and nuts. Drop by rounded teaspoon onto ungreased baking sheet.
3) Bake for 8-10 minutes and then cool for 2 minutes.

For 2 cookies:

Fiber: 1g
 
That sounds like a great alternative to chocolate-chip cookies, which are my son's favorite. That way, he'll get some healthy stuff, too. Thank you, Pappy!
