I found a recipe for Oatmeal Peanut Butter Cookies on allrecipes.com and made them this afternoon (with a few minor modifications, of course). Simple, quick, and delicious! Printable copy attached.
Oatmeal Peanut Butter Cookies
½ cup shortening (Crisco)
½ cup unsalted butter, softened
1 cup packed brown sugar
¾ cup white sugar
1 cup crunchy peanut butter
2 eggs
1½ cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup rolled oats
1. Preheat oven to 350 degrees.
2. Line two baking sheets with parchment.
3. In a large bowl, cream together shortening, butter, brown sugar, white sugar, and peanut butter until smooth.
4. Add the eggs one at a time and beat until well blended.
5. Combine the flour, baking soda, and salt; mix into the creamed mixture until well blended.
6. Add the oats and mix until just combined.
7. Drop dough by teaspoonfuls onto prepared cookie sheets; make 12 cookies per sheet.
8. Bake for about 12 minutes in the preheated oven, or until just light brown. Don't over-bake. Repeat with remaining dough.
Cool and store in an airtight container.
Makes 4 dozen cookies.
