Mini's Moussaka

Mini man - maxi food

1 red onion
1 yellow onion
garlic
1 sweet pepper
2lb minced meat
1 can tomatoes
1lb carrot batons
tomato puree
paprika
galangal
oregano
3 aubergines
500g natural yoghurt
1 tbs flour
3 eggs

Saute the diced onions, garlic & pepper in a little olive oil
Stir in some paprika & galangal
Add the minced meat and stir until all browned.
Add tomaotes and tomato puree, followed by carrots.
Season with salt, pepper and oregano.
Simmer to thicken - mine was a little too runny.
Chop the aubergines into large dice and stir fry in olive oil until browned & soft. Salt the aubergines while cooking.

Layer the meat mixture and aubergines in a deep dish.
Mix together yoghurt, eggs, flour and add a little paprika & oregano.
Pour over top of dish.

Bake in hot oven until golden brown on top.

Serve - excuse the messy table.

You could vary this infinitely, i used a lot of meat and carrots and chopped the aubergines to suit my son's preference

Good question Lee, I guess I just assumed lamb, but the wife says she has used ground beef before.

You know I have never tasted this, which is crazy because Greek food is my favorite! But every time I go to eat Greek there are other dishes that scream for my attention first! :in_love: One day though, because I am SURE that I would LOVE it!
