Pork chops with leek & tomato sauce

Leek & tomato sauce

This is approximately what I did - vary it to your own tastes - I was not entirely happy with the seasoning.

1 leek (sliced)
1 stick of celery (chopped)
2 cans of chopped tomatoes (14oz)
mixed herbs
dried chives
paprika

Saute the celery & leek in some vegetable oil.
When softened, sprinkle over about 2 tsp of paprika and stir fry until aromatic.
Add the tomatoes, bring to the boil and and then adjust to simmer.
Add approx teaspoon of chives and tablespoon mixed herbs.

Leave to simmer for about 20 minutes as flavours develop.
Adjust seasoning.

Pork chops

4 pork chops
Thai curry spice mix
black pepper

Heat some oil in a oven proof pan (I used a saute pan - you guys might use a DO)
When hot add the pork chops in a single layer.
Sprinkle over the curry mix and black pepper.
Cook for about 5 mins and turn over - sprinkle again with the spices.
After several minutes, pour over the sauce and move into a hot oven until done (about 20 minutes)

Serve with the suace on top.

Next time, I will probably use basil and rub the pork first - just in too much of a rush tonight.

That tomato leek sauce sounds very interesting. I'd like to try it on some pasta or rice.

I tend to make up things like depending what I've got to hand. I would normally use onion but wanted something a little different. I originally made to go with a chicken I roasted on Monday but didn't want a full roast meal.

what didnt you like about the seasoning? what kind of paprika did you use?

I used straight paprika - a bit of smoked would have been nice. The seasoning wasn't quite in balance but I had run out of time. It was better when with the prok chops.

Forgot to say, added some of the roast chicken jus to the sauce.
