What have you eaten Sunday 8/18/2019 to Saturday 8/24/2019?

Rain or shine yes, but we've got severe weather right and now all around the area.
Grilling has been cancelled, I'll just throw something together.
 
Last night I had chicken salad on a large croissant and a salad.
Tonight's dinner, I'll run out for break.
I start my full time 2nd shift position today.
Yay! Back in the saddle.
 
Well, it certainly wasn't the Warden's Lasagna........
...used "No Boil" Noodles, which didn't swell up like the normal ones do when boiled... won't use them again...

Not very photogenic, but it was tasty........ perhaps too little Beef Mixture, perhaps a little too much of the Ricotta mixture, and I definitely messed up the layering... but I enjoyed the experience, and the meal, and I have two nice slabs in the freezer for the future.....

I am back from Vacationing & Camping the Southern Oregon Coast for a week. So sad to hear about Aubrey. (God Bless her.)
DD & I are off to Denny's for Breakfast- Tonight? No idea yet.
 
Last night was Braised Lamb loin chops (fresh garlic, lemon juice and chicken broth), steamed broccoli, mashed potatoes and pan gravy.

Excellent dinner.......


Brined and Baked in the Oven, a huge Chicken Breast, obviously bought to feed us both..... plenty left for lunch tomorrow....


Rubbed with Salt, Pepper, Garlic Powder and Sweet Paprika...


Brown Rice, Buttered, Peas w/ some Leftie Carrots, Leftie Beets and of course, a Salad...

The kids came over after work.....I fried thin cut sirloin steaks in the cast iron pan with garlic granules and Italian spices.
They were so tender.
Corn on the cob, and sweet tater fries. Regular fries too.
Pumpkin pie for dessert.
 
Well lasagna got put off.

Dinner was western scramble (ham, green pepper & onion) and tomato salad (kumato tomato, fresh garlic, fresh basil, house seasoning, olive oil and water).

Wow guys, delicious looking dinners.
Dan, I'll keep my eyes out for those.

I decided to eat what the kitchen was serving at work.
"Pasta bake", which was pretty good, broccoli and apple cake.
Next time I'll try to get pictures of what I eat there.
Tonight is going to be bean/cheese burritos.
 
Monday night dinner- I made a fish & Shrimp dish
over rice. It was pretty amazing. I'll be doing that one again.

Sass, Your mentioned "Pasta Bake" set me off to return to the oven,
and do another of the Warden's responsibilities.... Baked Ziti..... still have stuff left over from the Lasagna, so why not ??

They are good. I have also been buying the heirloom cherry tomatoes lately. DD likes the brown cherry tomatoes better than the big ones. I usually buy vine tomatoes.
 
I bought 2 burritos from the organic/vegetarian section at Kroger.
They are the Sweet Earth Santa Cruz variety.
Delicious and filling!
 
this is an interesting and tasty marinade - originally came from a "lettuce wrap" dish.
wrap bombed but the chicken is really tasty.

3-4 hr marinading
preheated hot pan
the sweet chili sauce has a lot of sugar - so you get the color/faux burnt long before the chicken cooks through. I did the make pretty (internal temp about 110'F) -
followed by
3 minutes @ 30% power in the microwave
rest
another 3 minutes @ 30% power
to cook the chicken through to 145'F
rest 5 minutes prior to service

Sweet Chili Marinade
in a bowl, add:
1/2 cup sweet chili sauce
1/3 cup low sodium soy sauce
juice of one lime
1 T sriracha sauce
[2t fresh grated ginger - option]
2 cloves garlic finely minced

emulsify with:
3 T olive oil
 
Mini Lasagna (layers had no boil noodles, sauce, mozzarella, ricotta, parmesan reggiano & pecorino romano cheese mixture, meat, mushrooms and hard boiled egg).

Well- the Liver & Onions did not make it tonight.
DD brought home tasty Taco's for Taco Tuesday.
Love their beans.

I'm going to sign the dinner sheet at work when I get there today.
I've no clue what it's going to be.
There are always two choices.
I'll take a picture while I'm on break.
