1 1/2 boxes of low or no sodium chicken stock or broth
3 tablespoons soy sauce
carrots
1 tablespoon fresh ginger, minced
1/2 clove garlic,minced
fresh cracked black pepper
approx. 1/2lb instant noodles(the ramen noodle type)
snow peas
spring onions
fresh lime, cut in 1/4's
optional ingredients:
cilantro
chile oil
chile paste
cooked meat
i ate a similar dish at a Vietnamese Restaurant in Cali and loved it except the cilantro
boil the carrots until fork tender, add all other ingredients except the lime and chile..bring to a simmer until noodles are done
when ready to eat spoon desired amount of heat to your bowl, garnish with some spring onion, put one lime quarter in the bowl and juice another quarter into bowl. enjoy
