Mama's Beef and Spinach Frittata

I need to lose some weight so I decide to join Weight Watchers. I thought if anyone else was using weight watchers to lose weight we might share some TNT recipes. I thought maybe if there was enough interest, we could have a subforum in the diet forum just for WW recipes. It might even attract more potential members who are looking for TNT WW recipes.

So, if anyone else would like to join in....

This morning for breakfast I put together a Beef and Spinach frittata. Here's what I did:

8 large eggs
1/3 cup of skim milk
1/2 pound of lean ground beef
1 cup of sliced mushrooms
1 tablespoon of Olive Oil
1 (10 ounce) package of frozen spinach, thawed and drained
1/3 cup of Parmesan cheese, grated
2 cloves of garlic, minced
1/2 tsp. Italian Seasoning
Salt and Pepper, to taste

Preheat oven to 350 degrees F.

Brown the ground beef over medium heat. Drain and set aside.

In a non-stick pan, saute the mushrooms in the Olive Oil. Add the garlic, spinach, ground beef, Parmesan Cheese, italian seasoning, salt, pepper. Mix well.

In a medium bowl, whisk together the eggs and skim milk. Pour over the spinach mixture.

Bake in the preheated oven until center is set (I didn't time it but I think it took about 15 minutes)

Serve with sliced tomatoes. Makes 6 servings.

Points Plus per serving: 4
The picture below is DH's plate. He's doesn't need WW so I added hash browns to his. If, however, you want add 1/2 cup of hash browns cooked in 1 teaspoon of Olive Oil, it will add 3 points plus.
