The recipe called for zucchini, but I wanted to experiment with a daikon radish as well.
These were easy and wonderful!

Parmesan Zucchini and Radish Chips
2 medium zucchini, or 1 zucchini and 1 medium daikon radish, sliced 1/4 inch thick (I put my mandolin on widest setting)
Cooking spray
3 T. Parmesan cheese
1 T. fresh parsley, chopped
Freshly cracked black pepper
Pinch of kosher salt
Preheat oven to 425 degrees. Line a rimmed baking sheet with parchment paper. Arrange veg. slices on parchment and spray with Pam.
Mix the rest of the ingredients and put some on each veg. slice. Bake about 30 minutes.
